- 8oz (225g) self-raising butter
- 3 ½ oz (100g) butter, cut into small cubes
- 2 ¾ oz (75g) castor sugar
- 4 ½ oz (125g) stoned dates
- 2 bananas, mashed
- 2 eggs, beaten
- 2 tablespoon honey
Pre-heat oven to gas mark 3 (325F 160C)
Grease 2lb (900g) loaf tin. Sift the flour into a large bowl. Run in the butter using your fingertips until it resembles breadcrumbs. Stir in the sugar, chopped dates, bananas, and beaten eggs into the dry mixture. Mix together to form a soft dropping consistency. Spoon the mixture into the loaf tin and level the top with the back of a spoon.
Bake in the centre of the oven for about an hour or until golden. Test by insuring a thin skewer into the centre of the cake, to see if it comes out clean. Leave to cool in the tin for a few minutes. Turn out onto a wire rack to cool completely. Can be served hot or cold.
