I first experienced haloumi several years ago whilst on holiday with my family in Cyprus. This dish is very tasty, and goes well with a mixed salad.
Preparation time 10 minutes
Cooking time 5 minutes
- 5oz (150g) mixed green lettuce leaves, including lambs lettuce.
- 9oz (250g) haloumi cheese
- 2 tablespoon olive oil
- 3 large tomatoes (cut into pieces)
- For the dressing
- 4 tablespoon olive oil
- 1 tablespoon lemon juice
- ½ teaspoon castor sugar
- Salt and ground black pepper
Method.
For the dressing, mix the olive oil, lemon juice, and sugar together in a large bowl. Season with salt and pepper, stir in the chopped parsley. Add the mixed green salad leaves and tomatoes, and toss to coat with the oil. Transfer to a large serving bowl.
Slice the halloumi cheese and brush with olive oil, cook briefly on a grill on a medium barbeque for two minutes each side, until golden. Arrange the haloumi on top of the salad, pour over the dressing.
