Barbequed Trout with Bacon

This is a very easy and very tasty dish to prepare.  Serve with new potatoes and lightly barbecued tomatoes.
Preparation time 15 minutes
Cooking time 10-15 minutes
  • 4 trout gutted and cleaned
  • 1 tablespoon plain flour
  • 4 rashers of streaky bacon (smoked)
  • 2 tablespoon olive oil
  • Juice of ½ lemon
  • Salt and ground black pepper
Place the trout on a cooking board and dry thoroughly with kitchen roll.  Season the flour with salt and black pepper, stretch the rashers out thinly.  Roll the fish in the seasoned flour and wrap the bacon round tightly.  Brush with olive oil and cook on medium-hot barbeque for 10-15 minutes, turning once. Serve at once with the lemon juice drizzled on the top.
