Butterfly Cakes


Children will love making these cakes as well as eating them. Get them involved with weighing the ingredients, stirring the mixture and the most fun is decorating the top.

Cooking time 15-20 minutes
INGREDIENTS for 12 cakes
  • 4oz (110g) plain flour
  • ½ teaspoon baking powder
  • 4oz (110g) butter, soft
  • 4oz (110g) castor sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
For the butter cream
  • 6oz (165g) Icing sugar
  • 4oz (110g) butter, soft
  • ½ teaspoon vanilla essence
 Pre-heat oven to gas mark 4 (350F 180C)
Sift the flour and baking powder into a large mixing bowl. Add the sugar, eggs, flour, butter and vanilla essence. Mix together with a whisk until the mixture is light and fluffy. Divide the mixture between 12 baking cases. Bake in the centre of the oven for 15-20 minutes, until light brown in colour. Leave in their cases for a minute then cool on a wire rack. For the decoration, cut off the top of each cake, cut these in half. Top each cake with butter cream and place the cut off pieces to form wings on top of the cake. Ideal for birthday parties.
