This is a quick and easy to make family fruit cake, ideal for afternoon tea or picnic’s.

Cooking time 1 –1 ¼ hours
Oven temperature gas mark 5 (375F – 190C)
- 8 oz (200g) self raising flour
- 4 oz (100g) butter or margarine
- 4oz (100g) soft brown sugar
- 4oz (100g) sultanas
- 4oz (100g) currants
- 1oz (100g) mixed peel
- 1 egg
- About ¼ pint of milk.
- 1 level teaspoon mixed spice
- 1 level spoonful cinnamon
Sift the flour and spices into a large mixing bowl. Rub in the butter or margarine with your fingertips until it resembles breadcrumbs. Add the sugar, currants, sultanas and peel. Mix with egg and milk until it forms a soft consistency, i.e. so the mixture drops easily from the knife. Put in 2lb (1kg) greased loaf tin, making sure the top is level. Bake in the centre of the oven for approx 1hour. Test the cake before removing from the tin, when a skewer is inserted into the cake it should come out clean. Turn the cake on a wire tray to cool. Slice and serve.
