Welsh Cakes

This is my mother in laws recipe, very quick and easy to make and also very tasty.

  • 8oz (225g) plain flour
  • 1 teaspoon baking powder
  • 2 oz (50g) butter or margarine
  • 2oz (50g) lard
  • 4oz (110g) castor sugar
  • 2oz (50g) sultanas
  • 2oz (50g) currants
  • 1 egg
  • 2 tablespoon milk
  • A little castor sugar
Heat the griddle or top of the stove. Sift the flour baking powder and salt in a bowl.   Cut up the butter and lard into small pieces. Rub into the flour using your finger tips until the mixture resembles breadcrumbs. Stir in the sugar and fruit.  Beat the eggs lightly and add to the mixture with just enough milk to form a dough. Roll the dough on a lightly floured surface arbour ½ inch thick. Cut out rounds using a 3 inch pastry cutter. Bake the cakes on the greased hot griddle, over a low heat on the stove for 3 minutes on each side until golden brown. Sprinkle with castor or icing sugar and cool on a wire rack. Welsh cakes are ideal for freezing.
