Cup Cakes

The best thing about making cup cakes is letting the children decorate them.  My grandchildren had fun making funny faces last time we made them, this time they liked the idea of decorating them with sweets! 
Preparation time 10 minutes
Cooking time 15-12 minutes
4oz (110g) plain flour
½ teas baking powder
4oz (110g) butter, soft
4oz (110g) castor sugar
2 eggs
1 teaspoon vanilla essence
For the butter cream
6oz (165g) Icing sugar
4oz (110) butter, soft
½ teaspoon vanilla essence
A few drops of red food colouring, which turns pink
 Pre-heat oven to gas mark 4 (350F 180C)
Sift the flour and baking powder into a large mixing bowl. Add the sugar, eggs, flour and vanilla essence. Mix together with a whisk until the mixture is light and fluffy. Add a couple of drops of colouring and mix well. Divide the mixture between 12 baking cases. Bake in the centre of the oven for 15-20 minutes, until light brown in colour. Leave in their cases for a minute then cool on a wire rack. To decorate, pipe the butter cream on top of each cake, and place dolly mixture sweets on top.
