Rhubarb Crumble

This is a very popular with my family, it is quick and easy to make and is delicious served with cream, Ice-cream or custard.

  • 1.5lb (500g) rhubarb
  • 6oz (175g) sugar
  • 2 tablespoons orange juice
  • 30z (75g) butter
  • 6 oz (175g) plain flour
Trim the tops and ends from the rhubarb, and wash thoroughly.  Cut into half inch pieces and put into a deep buttered ovenproof dish.  Sprinkle the fruit with half the sugar and add the orange juice over the rhubarb.  Cut the butter into small pieces and rub it into the flour until the mixture resembles breadcrumbs.  Blend in the remaining sugar, sprinkle the crumble mix over the rhubarb, pressing it down well with the back of a spoon.  Bake in the centre of the oven for 35-40 minutes, or until topping is crisp.  The combination of the sharp rhubarb and sweet crispy topping makes this a very tasty dessert.
