Bubble & Squeak

This is another quick and easy recipe. Bubble and squeak goes very well with any leftover meat from the Sunday roast. It is also very good with sausages.

 
Preparation time 10 minutes
Cooking time 20 minutes
INGREDIENTS
  • 2lb (900g) cooked mashed potato
  • 1lb (450g) cooked chopped cabbage
  • 1 onion (finely chopped)
  • 2 tablespoon oil
  • 4 oz (110g) bacon (chopped)
  • Salt and black pepper
METHOD
Heat the fat in a heavy based pan on top of the stove. Fry the bacon and onion until crispy. Add the potato and cabbaged and mix thoroughly. Cook over as medium heat and turn the mixture over occasionally until it is crisp and golden.
