Florentines are chocolately and chrunchie, simply delicious.  Ideal for afternoon teaparty.

Preparation time 15 minutes

Cooking time 10 minutes
  • 1oz (25g) plain flour
  • 1 ¾ oz (50g) butter
  • 1 ¾ oz (50g) chopped almonds
  • 1 ¾ oz (50g) mixed peel
  • 1oz (25g) chopped raisins
  • 1oz (25g) chopped glace cherries
  • Grated rind of half a lemon
  • 4 ½ oz (125g) melted dark chocolate, melted over a bowl of hot water
Pre-heat oven to gas mark 4 (350F 180C)
Line 2 large baking trays with grease proof paper. Melt the butter and sugar in a small heavy based pan, until the butter has melted and the sugar has dissolved. Remove the pan from the heat, stir in the flour mixing well. Add the chopped almonds, mixed peel, raisons, cherries and grated lemon rind and thoroughtly mix.
Place spoonfuls of the mixture well apart on the baking trays. Bake in the centre of the oven for 10 minutes, or until golden. Spread the melted chocolate on the smooth side of the Florentine, before it sets make wavy lines with a fork. Leave to cool chocolate side up.
