Children and toddlers love Gingerbread Men. They will enjoy helping you with the mixing, and will have great fun cutting them out and decorating them.

- 8oz (220g) plain flour
- 4oz (110g) butter, cut into small cubes
- 3oz (75g) soft brown sugar
- 1 level teaspoon ground ginger
- 1 level teaspoon bicarbonate of soda
- 3 tablespoon golden syrup
- 1 egg, beaten
- 4oz (110g) icing sugar
- 1 tablespoon warm water.
Sift the flour, bicarbonate of soda and ground ginger into a large mixing bowl. Rub in the butter using your finger tips, until the mixture resembles breadcrumbs. Stir in the sugar, beat the egg and syrup into the flour mixture. Mix thoroughly to form dough, continue to knead the dough until it is smooth.
Roll out the mixture on a lightly floured surface until ¼ inch (0.5cm) thick. Using a gingerbread man cutter, cut out gingerbread men until all of the dough has been used, re-rolling and cutting the trimmings. Place the gingerbread men on greased baking sheet and bake in the oven at gas mark 5 (375F 190C) for 12-15 minutes, until golden brown. Leave on the baking sheets to cool slightly, and then transfer carefully to a wire rack and leave to cool. To make the icing put 4oz icing sugar in a bowl, add 1 tablespoon warm water and mix until you have a smooth stiff paste. Decorate the gingerbread men with an icing bag with the smallest nozzle.
