Mini Pizza

Children and toddlers love pizza. They will enjoy helping you with the mixing, and will have great fun cutting them out and decorating them.

Preparation time 30 minutes
  • 8oz strong white flour
  • 1½ teaspoon dried yeast
  • ¼ teaspoon sugar
  • 3-4 fl oz water
  • 1 level teaspoon salt
  • 1 egg, beaten
  • 1 teaspoon olive oil
For the topping
  • 1 small red onion
  • 1 tablespoon olive oil
  • 2 teaspoon tomato ketchup
  • 1 clove garlic
  • 2oz (50g) grated cheese
  • Toppings of your choice, ham, peppers, sweetcorn or tomatoes
To make the dough
Whisk the sugar in bowl of hot water, 3oz (75ml), add the yeast and leave the mixture for about 10-15 minutes.
Sift the flour and salt into a mixing bowl. Then pour in the yeast mixture and the beaten egg, and mix to a dough. Transfer the dough onto a lightly floured surface and knead for about 10 minutes until the dough is silky smooth and fairly elastic. Put the dough in a bowl and cover it with olive oil. Cover the top with a damp cloth and put the dough into a warm place to rise for about an hour. Once risen knead the dough for a further few minutes. Get the children to roll out the dough to about ½ inch, and cut out small circles with a large pastry cutter. 
For the topping
Chop and fry the onion in the oil for 5 minutes. Add the garlic and cook for a further 1 minute. Stir in the ketchup, tomato puree and 1 tablespoon of hot water.   Spoon the tomato mixture onto the pizza base and sprinkle with grated cheese. Get the children to decorate top with the ham, peppers, cherry tomatoes and sweetcorn, maybe making happy faces!
