Rock Buns

Rock buns are very easy and quick to make,  They are ideal for children to give you a helping hand. Let them help with the measuring of the ingredients and also stirring the mixture and then forming the rough heaps!

8oz (220) plain flour
2oz (50g) butter or margarine
2oz (50g) fat
4oz (110g) dried mixed fruit
4oz (110g) Demerara sugar
Pinch of salt
Grated rind of half a lemon
1 large egg
1-2 tablespoon milk
Pre-heat the oven to gas mark 6 (400F 200C)
Sift the flour, baking powder and salt into a large mixing bowl. Cut up the firm butter and fat and rub it into the flour using your finger tips, until it resembles breadcrumbs. Stir in the fruit, sugar and lemon rind. Beat the egg with 1 tablespoon of milk and add to the dry ingredients. Stir well, adding a little more milk if necessary to give a stiff dough. The mixture should just bind together.  Place the mixture in 12 heaps on the greased baking tray. Keep the mixture rough to give a rocky appearance which will remain whilst cooking. Bake in the centre of the oven for 15-20 minutes until they are golden brown. Cool on a wire rack before eating. Can be eaten warm or cold.
