Rum & Lime Cheesecake


Cheesecake is always a popular dessert. If you like cheesecake you will love this recipe.
  • 6oz (175g) coconut biscuits
  • 2oz (50g) desiccated Coconut
  • 3oz (75g) butter
  • 2 tablespoon rum
  • 1 tablespoon lime juice
  • 10oz (275g) cream cheese
  • ¼ pint (150ml) double cream
  • 4oz (110g) castor sugar
 For the cheesecake base, melt butter and crush the biscuits (in a polythene bag with a rolling pin) until they resemble breadcrumbs. Mix together  the melted butter, biscuits and desiccated coconut. Press into the base of a lightly greased, loosed bottomed 10” (25cm) flan tin. Leave in the refrigerator for about an hour until firm. Beat the cream cheese and sugar together, beat in the rum and lime juice. Spoon the mixture onto the biscuit base and chill before serving. Serve with slices of lime.
