Sausages with Potatoes & Onions


I recommend you use good quality pork sausages for this recipe. It is quick, economical and very tasty.
  • 1lb (450g) sausages
  • 2lb (900g) new potatoes 
  • 3  tablespoon olive oil
  • 2 large red onions (cut into wedges)
  • 2 clove garlic (crushed)
  • 1 tablespoon chopped fresh rosemary
  • Salt and ground black pepper
Pre-heat the oven to gas mark 7 400F 220C. Grease a 12 x 10 inch 30 x 25cm roasting tin. Cut the potatoes in half and arrange in the bottom of the tin. Drizzle over the olive oil evenly, add salt and pepper.  Toss well to coat the potatoes with oil. Sprinkle the chopped fresh rosemary on top of the potatoes and roast in the centre of the oven for 10 minutes. Remove the potatoes from the oven and add the crushed garlic and onion wedges. Toss the onions to coat them with oil and turn the potatoes. Place the sausages (8) in between the potatoes and onions. Return the roasting tin to the oven and cook for a further 30-35 minutes. Serve immediately with green vegetables.
