Children will enjoy helping make these scones, let them roll out the dough, and cut out the scones with the pastry cutter. Ideal for a birthday party or picnic.

8oz (220g) plain flour
4 level teaspoon baking powder
½ level teaspoon salt
2oz (50g) butter
4oz (110g) cheddar cheese (grated)
½ teaspoon dry mustard
¼ pint (125ml) milk
1 egg to glaze
10z (25g) cheddar cheese grated, for the topping
Pre-heat oven to gas mark 7 (425F 220C)
Sift the flour, baking powder, mustard and salt into a large bowl. Rub in the butter with your fingertips until it resembles bread crumbs. Add the grated cheese, and a little milk to make a soft dough. Knead the dough on a lightly floured surface. Roll out the dough to 1inch (2cm) thickness.
Cut out the scones with the smallest pastry cutter. Place on a baking tray, glaze the top with the beaten egg and sprinkle the grated cheese on top. Bake in the centre of the oven for about 10-15 minutes, until well risen and light golden brown. Serve hot or cold, delicious with butter.
