Courgettes Provencel



This is a delicious, quick and easy starter.

 Cooking time 15 minutes
  • 1 Large onion
  • 1 clove of garlic, crushed
  • 2oz (50g) butter
  • 1lb (500g) courgettes
  • 3/4 lb (350g) tomatoes, peeled and sliced
  • 1 tablespoon tomato puree
  • Salt and black pepper
  •  2 tablespoons water
  • 4 tablespoons cream
  • 2oz (50g) grated cheddar cheese
  • 1oz (25g) fresh breadcrumbs
Melt the butter in a heavy based pan and fry the onions and garlic until soft.  Slice the courgettes and add to the onion mixture.  Cook gently for 10-15 minutes, stirring occasionally. Add the seasoning and stir in the cream. Spoon into 1 large or 6 small ovenproof dishes.  Mix together the breadcrumbs and cheese, and sprinkle over the courgette mixture.  Place under a moderate grill until golden brown.  I recommend you serve this with granary bread and butter.
