I usually make this cocktail with avocado, but it is also very good with apple.
Preparation time 15 minutes
- 4 small green eating apples
- 3 tablespoon thick mayonnaise
- 1 tablespoon lemon juice
- Salt and black pepper
- 4oz (100g) peeled prawns
- 1 tablespoon chopped chives
- 2oz (50g) cheddar cheese, finely diced
- Watercress to garnish
Cut the apples in half, scoop out the flesh and core, leaving a firm shell inside the peel. Mix the mayonnaise, lemon juice, seasoning and curry powder. Remove the core from the apple flesh, chop the remaining flesh and add to the mayonnaise, together with the halved prawns, chives and cheese. Mix thoroughly then spoon back into the apple shells. Arrange on small plates and garnish with watercress.
