Baked Mushrooms

  • 4 large flat mushrooms
  • 3/4 pint (150ml) chicken stock
  • 1 small onion finely chopped
  • 2oz (50g) bacon finely chopped
  • 1oz (25g) butter
  • 8oz (225g) cottage cheese
  • Salt and black pepper
  • 1 teaspoon dried oregano
  • Parsley to garnish
Peel and trim the stalks of the mushrooms and dip each mushroom in boiling stock for 1/2 – 1 minute. Drain and place on grill rack stem upwards. Melt the butter in a heavy based pan and fry the onion and bacon in the butter until golden brown. Cook slightly, then mix into the cottage cheese with the seasoning and oregano. Almost cover the dark surface of the mushrooms with the cheese mixtures. Place under a moderate grill for about 5 minutes or until the cheese is lightly browned. Serve hot with toast. Garnish with parsley.
