This recipe was passed to me by a member of my family. It is quick and easy to make and very tasty.
PREPARATION TIME 15 MINUTES
- 1 tablespoon oil
- 1 onion (chopped)
- ¾ pint (425ml) vegetable stock
- 1lb (450g) broccoli florets (thinly sliced)
- 6 tablespoon crème fraiche
- 60z (170g) stilton cheese (crumbled)
- Salt and black pepper
Heat the oil in a heavy based saucepan, add the onion and cook until soft. Add the broccoli and cook until tender. Add the crème fraice and stilton and liquidise until very smooth. Strain the soup into a clean saucepan and reheat gently, do not boil. Season with salt and black pepper and serve immediately with crusty bread or rolls.
