Melon & Black Grape Cocktail

This a very refreshing summer starter, and very easy to make.
  • 8oz (225G) black grapes
  • 1 ripe melon
  • Fresh mint leaves (optional)
  • 1 egg white
  • 1 tablespoon castor sugar
  • Mint sprigs to garnish
Half and remove the grape pips and place in a bowl. Cut the melon in half, or quarters and remove the seeds. Either using a melon baller, scoop out as many balls as possible and add to the grapes with any juice, or cut the melon flesh into neat squares. Crush a few mint leaves and mix into the fruit and chill. Before serving, dip the rims of the glass dishes into the egg white and then into the castor sugar to give it a frosted effect. Spoon in the melon and grape mixture into glass dishes, and garnish with a sprig of mint.
