Spicy Cheese Lasagne

This is a very  spicy and tasty pasta dish, ideal for a supper party. Serve with a tossed green salad and crusty bread. Delicious.

Cooking time 45 minutes
INGREDIENTS – serves 8
  • 8oz (225g) lasagne
  • 2oz (50g) butter or margarine
  • 1 large onion, chopped
  • 3 clove of garlic, crushed
  • 2 14oz (400g) cans chopped tomatoes
  • 1 large courgette, sliced
  • 1 ½ tablespoon chopped green chilli pepper
  • 2oz (50g) plain flour
  • 1 ¾ pints (1ltr) milk
  • ½ teaspoon crushed dried chilli pepper
  • Salt and black pepper
  • 12oz (350g) Cheddar cheese, grated
Pre heat oven to Gas mark 5 (375F 190C)
Grease a 13 x 9 inch (33 x 23cm) ovenproof dish
Place the sheets of lasagne into a bowl of hot water, one at a time. Let them soak for 10-15 minutes. Heat the butter or margarine in a heavy based pan. Add the onion, garlic, chopped chilli and cook for about 5 minutes, until soft. Stir in the flour and cook for 3 minutes, stirring constantly. Pour in the milk and bring to the boil, stirring. Reduce the heat to low and simmer gently until thickened, about 5 minutes, stirring occasionally. Stir in the tomatoes, courgettes and diced chilli pepper into the sauce. Season with salt and pepper. Spoon a little of the sauce into the prepared baking dish, spread it out evenly over the bottom. Cover with a layer of lasagne. Add one third of the remaining sauce and one third of the cheese. Repeat the layers until all the ingredients and been used. Bake in the centre of the oven for 45minutes, until the top is golden and bubbling.
