Strawberry Icecream

This ice cream is a perfect summer evening treat. It is best prepared the day before. Children will enjoy making this and will certainly enjoy eat it.
  • 8oz (225g) strawberries
  • 3oz (75g) icing sugar
  • ¼ pint (150ml) double cream
  • ¼ pint (150ml) single cream
  • Squeeze lemon juice
  • Garnish 6-8 large strawberries
Hull and wash the strawberries, drain them thoroughly and cut them into small pieces. Place them in a liquidiser, with the sieved sugar and lemon juice and blend until smooth.  Whisk the 2 creams together until thick, but not stiff, blend this into the strawberry puree. Spoon the mixture into a plastic freezing container, cover with lid and leave to freeze for 12 hours. About 2 hours before serving remove the ice cream from the freezing compartment and thaw slightly in the refrigerator. Scoop the ice-cream into individual glasses and decorate with fresh strawberries.
