Chilli Con Carne

INGREDIENTS (FOR 6)
  • 1lb (450g) lean minced b
    eef
  • 2 large tins chilli beans
  • 2 large onions
     
  • 1 large green pepper
  • 2 clove garlic, crushed
  • 2 16oz tins chopped tomatoes
  • 2 tablespoon olive oil
  • 1 heaped tablespoon of hot chilli power
  • or 3 finely chopped chilli peppers
  • 1 teaspoon ground cumin (optional)
  • 1 tea spoon full of paprika
  • Salt to taste
     
 
METHOD
 
Drain the chilli beans and rinse with cold water.  Peel and finely chop the onions, heat the oil in a flameproof heavy based pan over a low heat and fry the onions and crushed garlic until soft.  Stir in the minced beef and continue frying, stirring occasionally, until the meat has browned all over.  Stir in the chilli powder or chopped chillies, and blend in the drained kidney beans, add the tomatoes and their juices, chopped green pepper and season to taste with cumin, paprika and salt. Cover the pan with a lid and cook in the centre of a pre heated oven, gas mark 2, 300F (150C) for 2 hours.
 
Serve with rice and green beans and enjoy!
