Tomato Salsa

This recipe is very quick and easy to make.   It is good for a drinks evening served with chopped vegetables and tortilla crisps.

Preparation time 10 minutes


  • 2lbs (900g) tomatoes
  • Juice of 1 lemon
  • 2 fresh chillies
  • 1 small red onion
  • Salt and ground black pepper
  • Coriander leaves


Place tomatoes in a pan of boiling water for 60 seconds.  Drain and remove their skins using a sharp knife.  Chop the tomatoes coarsely and remove the bits of stem and put in a bowl.  Cut off the stems and deseed the chillies, peel and finely chop the onion and put in the bowl with the tomatoes, add the lemon juice, chopped coriander, and salt and pepper mix well and serve.
